Musings: Cream Cheese

Today’s topic is: “Share your favorite recipe featuring cream cheese.”

Cream cheese

Mmm, the possibilities!

When I think of cream cheese, the first image that pops into my head is a thick dollop of shmear on a toasted bagel.

The simplicity of a bagel and cream cheese is hard to beat. (And to jazz it up, I used to add peanut butter. Check out my sandwich post for details.)

As a teen, I remember snacking on a box of stoned wheat crackers and a brick of cream cheese covered with a splash of Worcestershire sauce. I would use the cracker to slice off a pat of the creamy cheese with its tangy topping. Very addictive.

It seems like everyone loves cream cheese. I remember that my parents used to hide pills for the dogs in a ball of cream cheese, although I hear peanut butter or marshmallows work as well.

Of course, I love plain cheesecake but I’ve had only marginal success making it from scratch at home. So, I think my current favorite cream cheese recipe is for the simple cream cheese frosting. It’s not overly sweet or too rich like buttercream frosting and tastes amazing on top of carrot cake. Here’s my birthday cake from 2014. Believe it or not, there was too much frosting in this four layer cake from the cookbook bible! (I think it was the only recipe I’ve made from them that wasn’t a homerun!)

I could eat Philadelphia sushi rolls with cream cheese nearly every day if given the chance! Unfortunately, since my husband isn’t a sushi fan, it’s been more than a year since my last sushi fix. So instead, I occasionally get to delight in cream-cheese-filled crab rangoons from the local Chinese restaurant.

Please pass along your favorite recipe in the comments.
