Today’s topic is: “If you could only eat one thing for breakfast for the rest of your life, what would you choose?”
Mmmm, I love breakfast. It’s my favorite meal; no contest.
There are so many delicious things to choose from: pancakes, French Toast, English muffins, oatmeal, cold cereal, yogurt, waffles, bacon and eggs, bagels, hash browns, pastries, omelets, biscuits and gravy, fresh fruit… the options really are endless.
My husband is an amazing breakfast chef and on mornings that he feels inspired, we have delicious berry pancakes, French Toast, or light and fluffy omelets. Every now and then, he will even bake biscuits from scratch, which are divine when eaten hot from the oven with a great deal of butter and honey on them.
These days, my usual breakfast includes three home-laid eggs, fried over medium, with a dash of ground garlic/sea salt. Sometimes I have a buttered slice of my homemade five-ingredient flax seed bread or half a cinnamon-raisin bagel. And on special occasions, we fry up a little bacon or ground sausage or sauté mushrooms. Of course, I always start my day with (my first of many cups of) decaf Earl Gray tea with a splash of low-fat milk and a touch of sweetener.
But I think if I had to choose just one thing for breakfast for the rest of my life, I’d pick oatmeal. There are so many flavors you can mix into oatmeal: peanut butter, chopped nuts, raisins, salted butter, berries, fruit, cinnamon, seeds, honey, maple syrup… I’d be able to switch it up so it wouldn’t seem like I had to eat the same thing every day. And I love how it keeps me feeling full for several hours. (Maybe one of my upcoming monthly resolutions should be to eat a different variation of oatmeal for breakfast every morning.)
